Preparation of Zucchini
Preheat the oven to 375°F (190°C). Cut the zucchinis in half lengthwise and scoop out the centers using a spoon, creating a hollow. Drizzle with olive oil and sprinkle with salt and pepper.
Filling Preparation
In a skillet, heat the remaining olive oil over medium heat. Add minced garlic and sauté until fragrant. Stir in cherry tomatoes and cook until they soften. Combine with cooked quinoa, chopped basil, and Parmesan cheese. Season with salt and pepper.
Stuffing the Zucchini
Fill the hollowed zucchinis with the quinoa mixture, packing it tightly.
Baking
Place the stuffed zucchinis on a baking sheet and bake for 25-30 minutes or until the zucchinis are tender and golden brown.
Serving
Serve hot with A La Mer Sauce drizzled over the top.
