1. Prepare the Boudin Balls
In a bowl, combine the boudin sausage, cooked rice, chopped green onions, and egg. Mix until well combined.
2. Form the Balls
Using your hands, form the mixture into small balls, about the size of a golf ball.
3. Coat the Balls
Roll each ball in bread crumbs until fully coated.
4. Fry the Balls
Heat the oil in a deep pan over medium heat. Fry the boudin balls in batches until golden brown, about 3-4 minutes per side. Remove and drain on paper towels.
