    Prepare the Chicken

    Pat the chicken breasts dry with a paper towel. Season both sides generously with blackening seasoning.

    Cook the Chicken

    In a large skillet, melt 2 tablespoons of butter over medium-high heat. Once the butter is hot, add the chicken breasts to the skillet. Cook for about 6-7 minutes on each side, until the chicken is cooked through and nicely charred. Remove from the skillet and set aside.

    Sauté the Mushrooms and Scallions

    In the same skillet, add the remaining 2 tablespoons of butter. Once melted, add the sliced mushrooms and cook until browned, about 5 minutes. Add the chopped scallions and cook for an additional 2 minutes.

    Make the Cream Sauce

    Pour in the heavy cream, stirring well to combine. Season with salt and black pepper. Allow the sauce to simmer for about 3-5 minutes until slightly thickened.

    Combine and Serve

    Return the blackened chicken to the skillet, spooning the sauce over the chicken. Cook for an additional 2 minutes to heat through. Serve hot.
