Prepare the Onions

Peel the onions and slice them into 1/4-inch thick rings. Separate the rings and place them in a bowl of cold water to soak for about 30 minutes. This helps to remove some of the bitterness.

Make the Batter

In a large mixing bowl, whisk together the flour, cornstarch, baking powder, salt, and black pepper. Gradually add the beer while whisking until you achieve a smooth batter. It should be thick but pourable.

Heat the Oil

In a deep skillet or fryer, heat the vegetable oil to 350°F (175°C). You can test the oil by dropping a small amount of batter into it; if it sizzles and bubbles, it's ready.

Batter the Onions

Remove the onion rings from the water and pat them dry with a paper towel. Dip each onion ring into the batter, allowing the excess to drip off.

Fry the Onion Rings

Carefully place the batter-coated onion rings into the hot oil, working in batches to avoid overcrowding. Fry until golden brown and crispy, about 2-3 minutes. Remove with a slotted spoon and drain on paper towels.
