Prepare the Beans

Rinse the dried red beans under cold water and soak them overnight in a large bowl with water to cover. Drain and set aside.

Cook the Sausage

In a large pot, heat olive oil over medium heat. Slice the Andouille sausage into rounds and add to the pot. Cook until browned, about 5-7 minutes. Remove and set aside.

Sauté Vegetables

In the same pot, add diced onion, green bell pepper, and celery. Sauté until softened, about 5-7 minutes. Add minced garlic and cook for another minute.

Combine Ingredients

Add the soaked beans, chicken broth, bay leaves, cayenne pepper, salt, and black pepper to the pot. Stir well to combine.

Simmer

Bring the mixture to a boil, then reduce heat to low. Cover and let simmer for about 1.5 to 2 hours, or until beans are tender.

Add Sausage & Rice

After the beans are tender, stir in the cooked Andouille sausage. In a separate pot, cook the rice according to package instructions. Serve the beans and sausage over the rice.
