Prepare the Meat Sauce
In a large skillet, heat the olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until translucent.
Add the ground beef to the skillet, breaking it apart with a spoon, and cook until browned. Drain excess fat if necessary.
Stir in the canned tomatoes, tomato paste, Italian seasoning, salt, and black pepper. Simmer for about 15 minutes, allowing the sauce to thicken.
Prepare the Spinach
In a separate pan, sauté the fresh spinach in a little olive oil until wilted. Set aside.
Assemble the Lasagna
Preheat your oven to 180°C (350°F). In a baking dish, spread a layer of meat sauce on the bottom.
Layer 4 lasagna noodles over the sauce, followed by half of the ricotta cheese, half of the sautéed spinach, and a sprinkle of mozzarella cheese.
Repeat the layers: meat sauce, noodles, ricotta, spinach, and mozzarella. Finish with a final layer of meat sauce and top with remaining mozzarella.
Bake the Lasagna
Cover the baking dish with aluminum foil and bake for 30 minutes. Remove the foil and bake for an additional 15 minutes or until the cheese is bubbly and golden.
Allow the lasagna to rest for 10 minutes before slicing and serving.
