1. Make the Dough
In a large bowl, whisk together the flour, baking powder, sugar, and salt. In another bowl, beat together the milk, eggs, and vanilla extract. Gradually add the wet ingredients to the dry ingredients, stirring until just combined.
2. Heat the Oil
In a deep pot or deep fryer, heat the vegetable oil to 375°F (190°C).
3. Fry the Zeppolis
Using a small scoop or spoon, carefully drop about a tablespoon of dough into the hot oil. Fry in batches, making sure not to overcrowd the pot. Cook for about 2-3 minutes on each side, or until golden brown.
4. Drain and Dust
Using a slotted spoon, remove the zeppolis from the oil and place them on a paper towel-lined plate to drain excess oil. While still warm, dust generously with powdered sugar.
5. Serve
Serve the zeppolis hot with your choice of two dipping sauces.
