    Prepare the Eggplant

    Slice the eggplants into 1/4-inch thick rounds. Sprinkle them with salt and let them sit for about 30 minutes to draw out excess moisture. Rinse and pat dry.

    Bread the Eggplant

    Set up a breading station with three shallow dishes: one with flour, one with beaten eggs, and one with breadcrumbs. Dredge each eggplant slice in flour, dip into the egg, and then coat with breadcrumbs.

    Fry the Eggplant

    In a large skillet, heat olive oil over medium heat. Fry the breaded eggplant slices until golden brown on both sides, about 3-4 minutes per side. Drain on paper towels.

    Assemble the Dish

    In a baking dish, spread a thin layer of marinara sauce. Layer half of the fried eggplant slices, followed by half of the ricotta and mozzarella cheese. Repeat the layers, finishing with mozzarella on top.

    Bake

    Preheat the oven to 375°F (190°C). Cover the baking dish with foil and bake for 25 minutes. Remove the foil and bake for an additional 15 minutes, or until the cheese is bubbly and golden.

    Serve

    Garnish with fresh basil leaves. Serve hot, with additional marinara sauce if desired, and optionally alongside cooked pasta.
