Prepare the Potatoes

Preheat your oven to 400°F (200°C). Wash the potatoes thoroughly and poke several holes in each potato with a fork. Rub them with olive oil, and sprinkle with salt. Place the potatoes directly on the oven rack and bake for 45-60 minutes, or until tender.

Scoop and Season

Once the potatoes are cool enough to handle, cut them in half lengthwise. Scoop out some of the flesh, leaving a thin layer of potato to hold the skin together. Brush the insides with olive oil, and season with salt and pepper.

Bake the Skins

Place the potato skins on a baking sheet, cut side up. Bake in the oven for an additional 10-15 minutes, until they are crispy.

Add Toppings

Remove the skins from the oven and sprinkle shredded cheddar cheese and crumbled bacon evenly over each skin. Return to the oven for another 5-10 minutes, or until the cheese is melted and bubbly.

Serve

Remove from the oven and let cool slightly. Top with sour cream and sprinkle with sliced green onions. Serve warm.
