Add Liquid Ingredients
Pour in the white wine to deglaze the pot, scraping up any browned bits. Cook for 5 minutes until the wine reduces slightly.
Simmer the Broth
Add the beef broth, thyme, bay leaves, salt, and pepper. Bring to a boil, then reduce the heat and let it simmer for 30 minutes.
Prepare the Croutons
While the soup simmers, preheat the oven to 400°F (200°C). Slice the baguette into 1-inch thick pieces and place them on a baking sheet. Toast in the oven for about 10 minutes until golden brown.
Serve the Soup
Remove the bay leaves from the soup. Ladle the soup into oven-safe bowls and top each with a few croutons and a generous amount of Gruyère cheese.
Broil the Cheese
Place the bowls under the broiler for 3-5 minutes, or until the cheese is melted and bubbly. Watch closely to prevent burning.
Garnish and Enjoy
