Preparation
Prepare the Shrimp
In a large bowl, combine the flour, cornstarch, salt, and black pepper. In another bowl, beat the eggs. In a third bowl, place the panko breadcrumbs. Dredge each shrimp in the flour mixture, dip in the beaten eggs, and then coat with panko breadcrumbs.
Fry the Shrimp
Heat the vegetable oil in a deep skillet or fryer over medium-high heat. Once hot, add the breaded shrimp in batches, frying until golden brown and cooked through, about 2-3 minutes per side. Remove and drain on paper towels.
Make the Aioli
In a mixing bowl, combine mayonnaise, sweet chili sauce, sriracha, and lime juice. Whisk until smooth and well combined.
Toss and Serve
In a large bowl, toss the fried shrimp with the sweet and spicy aioli until well coated. Serve immediately, garnished with lime wedges if desired.
