Marinate the Chicken
In a bowl, combine soy sauce, brown sugar, rice vinegar, minced garlic, and grated ginger. Add the chicken breast, ensuring it's fully coated. Cover and let it marinate in the refrigerator for at least 30 minutes.

Cook the Chicken
Heat a large skillet over medium-high heat. Remove the chicken from the marinade (reserving the marinade) and add it to the skillet. Cook for 6-7 minutes on each side until the chicken is cooked through. Remove the chicken from the skillet and let it rest.

Prepare the Sauce
In the same skillet, add the reserved marinade and bring it to a boil. In a small bowl, mix cornstarch and water to create a slurry, then stir it into the boiling marinade. Cook until the sauce thickens, about 2-3 minutes.

Slice and Serve
Slice the cooked chicken and return it to the skillet, coating it with the teriyaki sauce. Serve over cooked rice, garnished with sesame seeds and chopped green onions.
