Prepare the Dates

In a bowl, combine the pitted dates and boiling water. Let it sit for about 15 minutes until the dates soften. Then mash them into a paste.

Make the Batter

In a mixing bowl, cream together the unsalted butter and brown sugar until light and fluffy. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.

Combine Ingredients

Fold the date mixture into the butter mixture. Sift together the flour, baking powder, and salt, then gradually add to the wet mixture until just combined.

Bake the Pudding

Preheat your oven to 180°C (350°F). Pour the batter into a greased baking dish and bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.

Prepare the Bourbon Sauce

In a saucepan, combine the heavy cream and bourbon. Heat gently over low heat, stirring until warmed through. Do not boil.

Serve

Remove the pudding from the oven and let it cool for a few minutes. Serve warm with bourbon sauce drizzled over the top and a scoop of vanilla ice cream on the side.
