Prepare the Ingredients

Season the lamb shanks with salt and black pepper. Chop the onion and mince the garlic.

Sear the Lamb Shanks

In a large pot, heat olive oil over medium-high heat. Add the lamb shanks and sear on all sides until browned. Remove and set aside.

Sauté the Vegetables

In the same pot, add chopped onion and minced garlic. Sauté until the onion is translucent, about 5 minutes.

Deglaze with Wine

Pour in the red wine, scraping the bottom of the pot to release any browned bits. Allow to simmer for about 5 minutes.

Add Broth and Herbs

Return the lamb shanks to the pot. Add beef broth, bay leaves, and fresh thyme. Bring to a boil.

Braise the Lamb

Reduce heat to low, cover the pot, and let it simmer for 2 hours, until the lamb is tender.

Add Potatoes and Carrots

After 2 hours, add the gold potatoes and baby carrots to the pot. Cover and cook for an additional 30 minutes.

Serve

Remove lamb shanks and vegetables from the pot. Discard bay leaves. Serve warm, garnished with fresh thyme if desired.
