Preparing the Bone Marrow Butter

Roast Bone Marrow

Preheat the oven to 400°F (200°C). Place bones upright in a baking dish and roast for about 15-20 minutes until the marrow is soft and bubbly.

Make the Butter

In a bowl, mix the roasted marrow with softened butter, whiskey, thyme, and minced garlic. Season with salt and pepper. Chill until firm.

Roast the Onions

Slice onions in half and place on a baking sheet. Drizzle with olive oil, and season with salt and pepper. Roast in the oven for 30-35 minutes until caramelized.

Assemble the Casserole

In a greased baking dish, layer sliced potatoes. In a bowl, mix heavy cream, garlic powder, salt, and pepper. Pour over the potatoes and top with cheddar cheese.

Bake

Cover with foil and bake in the oven at 375°F (190°C) for 45 minutes. Remove foil and bake for an additional 15 minutes until golden brown.

Cook the Ribeye

Season the ribeye steaks with salt and black pepper. Heat a skillet over high heat and sear the steaks for 4-5 minutes on each side for medium-rare. Let rest before serving.
