1. Prepare the Greens
Wash and chop the collard and mustard greens, removing any tough stems.
2. Sauté the Aromatics
In a large pot, heat olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes. Add minced garlic and cook for an additional 1-2 minutes.
3. Add the Smoked Pork
Place the smoked pork in the pot and add the chicken broth. Bring to a simmer and cook for about 15 minutes.
4. Cook the Greens
Add the chopped greens to the pot. Stir well to combine. Season with salt, black pepper, and red pepper flakes. Cover and simmer for about 30-40 minutes, or until the greens are tender.
5. Finish with Vinegar
Stir in the apple cider vinegar just before serving. Adjust seasoning if necessary.
