Prepare the Shrimp Mixture

In a skillet over medium heat, add a bit of butter and sauté the chopped shallots until translucent. Add the shrimp and cook until they turn pink, about 3-4 minutes. Stir in the Pernod and cook for an additional 1-2 minutes. Remove from heat and let cool slightly.

Make the Cream Mixture

In a bowl, combine the sautéed shrimp and shallots with the cream, salt, and black pepper. Mix well until everything is evenly coated.

Prepare the Bread

Preheat the oven to 200°C (390°F). Spread the softened butter generously on one side of each slice of bread.

Assemble the Toasts

Spread the shrimp and cream mixture evenly over the unbuttered side of each slice of bread.

Bake the Toasts

Place the prepared slices on a baking sheet, shrimp side up, and bake in the preheated oven for about 10-12 minutes or until the edges are golden and crispy.

Remove from the oven, garnish with fresh parsley, and serve hot.
