Method
Prepare the Pork Cheeks
Marinate the Pork Cheeks
In a bowl, combine soy sauce, brown sugar, sesame oil, garlic, ginger, gochujang, and black pepper. Add pork cheeks, ensuring they are well coated. Cover and marinate in the refrigerator for at least 2 hours or overnight for best results.
Cook the Pork Cheeks
Preheat a grill or grill pan over medium-high heat. Remove pork cheeks from marinade, shaking off excess. Grill for about 5-7 minutes per side, or until they are nicely charred and cooked through. Let rest for a few minutes before slicing.
Prepare the Pickled Carrots
Make the Pickling Brine
In a saucepan, combine rice vinegar, sugar, and salt. Heat over medium until sugar dissolves. Remove from heat.
Assemble the Dish
Serve
On a platter, arrange the grilled pork cheeks, pickled carrots, lettuce leaves, sliced radishes, chopped cilantro, and peanut puffed rice. Allow guests to wrap their pork and garnishes in the lettuce leaves.
