Cooking Instructions

1

Assemble the Chicken

On each chicken breast, place two slices of prosciutto and 3 sage leaves. Roll the chicken tightly and secure with toothpicks.

2

Sear the Chicken

In a large skillet, heat olive oil over medium-high heat. Add the chicken rolls and sear until golden brown on all sides, about 3-4 minutes per side. Remove from skillet and set aside.

3

Make the Mushroom Jus

In the same skillet, add sliced mushrooms and cook until browned. Pour in Marsala wine and scrape the bottom of the skillet to deglaze. Add chicken broth and simmer for about 5 minutes until slightly thickened.

4

Bake the Chicken

Return the chicken rolls to the skillet, spoon some of the sauce over the top, and transfer the skillet to the oven. Bake for 15-20 minutes until the chicken is cooked through.

5

Cook the Pasta

While the chicken is baking, cook the angel hair pasta according to package instructions. Drain and set aside.

6

Serve

Remove the toothpicks from the chicken, slice it, and serve over a bed of angel hair pasta. Drizzle with the Marsala mushroom jus and garnish with remaining sage leaves.
