Preheat the oven

Preheat your oven to 350°F (175°C) and grease two 9-inch round cake pans.

Mix dry ingredients

In a large bowl, whisk together the flour, sugar, baking powder, baking soda, cinnamon, and salt.

Combine wet ingredients

In another bowl, mix the oil, eggs, and vanilla extract until well combined.

Combine mixtures

Gradually add the wet ingredients to the dry ingredients, mixing until just combined. Fold in the grated carrots, chopped pecans, and toasted coconut.

Bake the cake

Divide the batter evenly between the prepared cake pans and bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean.

Cool the cakes

Let the cakes cool in the pans for 10 minutes before transferring to wire racks to cool completely.

Prepare icing

While the cakes cool, you can prepare the cream cheese icing by beating together 8 oz of cream cheese, 1/2 cup of unsalted butter, 4 cups of powdered sugar, and 1 tsp of vanilla extract until smooth and creamy.

Assemble the cake

Once the cakes are completely cool, spread the cream cheese icing between the layers and on top of the cake.
