Method

Meatloaf Preparation

    Preheat Oven

    Preheat your oven to 350°F (175°C).

    Mix Ingredients

    In a large bowl, combine aged ground beef, breadcrumbs, chopped onion, eggs, minced garlic, Worcestershire sauce, salt, black pepper, and parsley. Mix until well combined.

    Shape Meatloaf

    Transfer the mixture to a loaf pan and shape it into a loaf.

    Bake

    Bake in the preheated oven for 1 hour, or until the internal temperature reaches 160°F (70°C).

Glazed Carrots Preparation

    Cook Carrots

    In a saucepan, combine sliced carrots, butter, brown sugar, salt, black pepper, and water. Bring to a boil, then reduce heat and simmer for 15-20 minutes until carrots are tender.

Potato Casserole Preparation

    Prepare Casserole

    Layer the sliced potatoes in a greased baking dish. Pour heavy cream over the top and sprinkle with shredded cheddar cheese, butter, salt, and black pepper.

    Cover with foil and bake at 350°F (175°C) for 45 minutes. Remove foil and bake for an additional 15 minutes until the top is golden brown.

Veal Demi Preparation

    Prepare Demi

    In a saucepan, combine veal stock, red wine, and minced shallots. Bring to a boil and then reduce to a simmer until reduced by half. Stir in butter, salt, and black pepper before serving.

Serving

    Slice the meatloaf and serve it alongside glazed carrots and potato casserole, drizzled with veal demi.
