Burger Preparation
Prepare the Onion Bacon Jam
In a skillet, cook the bacon over medium heat until crispy. Remove the bacon and set aside, leaving the fat in the skillet. Add the sliced onion to the skillet and cook until caramelized, about 10-15 minutes. Chop the bacon and stir it back into the onions. Remove from heat and set aside.
Form the Patties
In a mixing bowl, gently combine the Wagyu ground beef with salt and black pepper. Form the mixture into two patties, making them slightly larger than the burger buns to account for shrinkage during cooking.
Cook the Patties
Heat a tablespoon of cooking oil in a skillet over medium-high heat. Cook the patties for about 4-5 minutes on one side, then flip and cook for another 3-4 minutes for medium-rare, or until your desired doneness.
Assemble the Burgers
Toast the burger buns lightly. Place a cooked patty on each bun, top with pimento cheese, a generous spoonful of onion bacon jam, and pickles. Cover with the top bun.
Serve
Serve the burgers hot with fries on the side.
