Prepare the Dough
In a large mixing bowl, combine warm water and active dry yeast. Let it sit for about 5 minutes until frothy. Add the olive oil, salt, and flour gradually, mixing until a dough forms.
Knead the Dough
Transfer the dough to a floured surface and knead for about 8-10 minutes until smooth and elastic.
First Rise
Place the dough in a lightly oiled bowl, cover with a damp cloth, and let it rise in a warm place for 1-2 hours, or until doubled in size.
Shape the Focaccia
Preheat your oven to 425°F (220°C). Once risen, punch down the dough and transfer it to a greased baking sheet. Stretch it out to fit the pan. Use your fingers to create dimples all over the surface.
Second Rise
Cover the dough again and let it rise for another 20-30 minutes.
Add Toppings and Bake
Drizzle with olive oil and sprinkle with fresh rosemary and sea salt, if desired. Bake for 20-25 minutes or until golden brown.
Cool and Serve
Remove from the oven and let cool slightly before cutting into squares. Serve warm with sides of marinara and olive oil for dipping.
