Prepare the Ice Cream Base

In a medium saucepan, combine the whole milk, heavy cream, sugar, and salt. Heat over medium heat until the mixture is warm but not boiling.

Temper the Egg Yolks

In a separate bowl, whisk the egg yolks. Slowly pour about a cup of the warm milk mixture into the yolks while whisking constantly to temper them. This prevents the yolks from curdling.

Combine and Thicken

Pour the tempered yolk mixture back into the saucepan with the remaining milk mixture. Cook over low heat, stirring constantly until the mixture thickens enough to coat the back of a spoon, about 5-7 minutes.

Cool the Mixture

Remove from heat and stir in the vanilla extract. Let the mixture cool to room temperature, then refrigerate for at least 4 hours or overnight.

Churn the Ice Cream

Once chilled, pour the mixture into an ice cream maker and churn according to the manufacturer's instructions until it reaches a soft-serve consistency.

Freeze the Ice Cream

Transfer the churned ice cream to an airtight container and freeze for at least 4 hours or until firm.
