Prepare the Portabella Mushrooms

Preheat your oven to 400°F (200°C). Clean the Portabella mushrooms and remove the stems. Brush the tops and insides with 2 tablespoons of extra virgin olive oil. Place them on a baking sheet, gill side up.

Add the Toppings

Spread a layer of ricotta cheese inside each Portabella mushroom. Top with sliced olives, then tear the fresh mozzarella into pieces and distribute evenly over the mushrooms. Sprinkle the grated Parmesan cheese on top.

Bake the Mushrooms

Bake the prepared mushrooms in the preheated oven for 20-25 minutes or until the cheese is melted and bubbly, and the mushrooms are tender.

Prepare the Arugula Salad

While the mushrooms are baking, toss the arugula with the remaining 2 tablespoons of olive oil and chopped fresh herbs in a large bowl. Season with salt and pepper to taste.

Serve

Once the mushrooms are done, remove them from the oven. Serve each Portabella mushroom on a plate with a generous scoop of the arugula salad on the side.
