Preparation Steps
Prepare the Onions
Slice the onions thinly. In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the onions and a pinch of salt, cooking slowly until golden brown and caramelized, about 20 minutes, stirring occasionally.
Bake the Tomatoes
Preheat the oven to 375°F (190°C). Slice the Roma tomatoes in half and place them cut-side up on a baking sheet. Drizzle with olive oil, sprinkle with salt and black pepper, and bake for 25-30 minutes until tender.
Combine Ingredients
In a mixing bowl, combine the roasted tomatoes, caramelized onions, minced garlic, goat cheese, and fresh thyme. Mix until well combined, and adjust seasoning with salt and pepper to taste.
Bake the Dip
Transfer the mixture into a baking dish and bake in the oven for an additional 15-20 minutes until hot and bubbly.
Serve
Remove the dip from the oven and serve hot with the toasted baguette slices.
