1. Marinate the Shrimp
In a bowl, combine the chopped lemongrass, minced garlic, soy sauce, olive oil, lime juice, salt, and black pepper. Add the shrimp and mix well. Let it marinate for at least 30 minutes.
2. Prepare the Vegetables
In a separate bowl, combine the asparagus, red bell pepper, and sweet peas. Drizzle with a little olive oil and season with salt and pepper to taste.
3. Cook the Shrimp
Heat a large skillet over medium-high heat. Add the marinated shrimp and cook for about 2-3 minutes on each side or until they turn pink and are cooked through. Remove from the skillet and set aside.
4. Sauté the Vegetables
In the same skillet, add the vegetables and sauté for about 5-7 minutes or until they are tender but still crisp.
5. Combine and Serve
Add the cooked shrimp back to the skillet with the vegetables. Toss everything together and cook for an additional minute. Serve warm.
