Preparation Instructions
Prepare the Seafood
In a large bowl, combine the shrimp and catfish fillets with buttermilk. Let them soak for at least 30 minutes.
Prepare the Breading
In a separate bowl, mix flour, cornmeal, and cajun seasoning. Dredge the soaked seafood in the breading mixture until fully coated.
Fry the Seafood
In a large pot, heat the vegetable oil to 350°F (175°C). Fry the shrimp and catfish in batches until golden brown and cooked through, about 3-4 minutes for shrimp and 5-6 minutes for catfish. Remove and drain on paper towels.
Assemble the Po’ Boys
Slice the French bread pieces in half lengthwise. Spread a generous amount of remoulade sauce on the inside of each piece. Layer with fried seafood, shredded lettuce, sliced tomatoes, and pickles.
Serve
Close the sandwiches and serve immediately while hot.
