Preparation
Prepare the Shrimp
In a bowl, combine flour, cornstarch, salt, and pepper. In another bowl, whisk the eggs. In a third bowl, place the panko breadcrumbs.
Coat the Shrimp
Dip each shrimp first in the flour mixture, then in the egg, and finally in the panko breadcrumbs, ensuring they are well-coated.
Fry the Shrimp
In a large frying pan, heat the vegetable oil over medium-high heat. Fry the shrimp in batches until golden brown and cooked through, about 2-3 minutes per side. Remove and drain on paper towels.
Make the Bang Bang Sauce
In a bowl, mix together mayonnaise, sweet chili sauce, and sriracha until well combined.
Serve
Toss the fried shrimp in the bang bang sauce or serve the sauce on the side for dipping.
