Prepare the Peppers

Preheat your oven to 375°F (190°C). Cut the tops off the bell peppers and remove the seeds and membranes. Lightly brush the outside of the peppers with olive oil and place them in a baking dish.

Cook the Vegetables

In a large skillet, heat olive oil over medium heat. Add onion, celery, and green bell pepper, and sauté until softened, about 5 minutes. Stir in garlic and cook for an additional 1 minute.

Mix the Stuffing

In the skillet, add the shrimp, crab meat, cooked rice, and Cajun seasoning. Stir to combine and cook for about 3-4 minutes until the seafood is cooked through. Season with salt and black pepper to taste.

Stuff the Peppers

Spoon the seafood mixture into each bell pepper, packing it down gently. Place the stuffed peppers upright in the baking dish.

Bake

Cover the baking dish with aluminum foil and bake for 25 minutes. Remove the foil and bake for an additional 15 minutes, or until the peppers are tender and slightly charred.

Serve

Remove from the oven, garnish with chopped parsley, and serve warm.
