Prepare the Ingredients

Chop the Andouille sausage, bell pepper, onion, celery, and mince the garlic.

Cook the Sausage

In a large pot, heat olive oil over medium heat. Add the Andouille sausage and cook until browned, about 5 minutes.

Sauté the Vegetables

Add the chopped onion, bell pepper, celery, and garlic to the pot. Sauté until the vegetables are soft, about 5 minutes.

Add Rice and Liquid

Stir in the rice and cook for an additional 2 minutes. Then, add the chicken broth, diced tomatoes, and Cajun seasoning. Stir well.

Simmer

Bring the mixture to a boil, then reduce the heat to low. Cover and simmer for about 15 minutes, or until the rice is cooked and has absorbed most of the liquid.

Add Seafood

Once the rice is cooked, gently fold in the shrimp and crab meat. Cook for an additional 5 minutes until the shrimp are pink and cooked through.

Season and Serve

Season with salt and black pepper to taste. Garnish with chopped green onions before serving.
