Prepare the Vegetables

Peel the parsnips and carrots, then cut them into evenly sized pieces (about 1 inch thick).

Make the Glaze

In a small saucepan over medium heat, combine honey, olive oil, butter, salt, black pepper, and fresh thyme. Stir until the butter has melted and the mixture is well combined.

Roast the Vegetables

Preheat your oven to 400°F (200°C). Place the parsnips and carrots in a large baking dish. Pour the honey glaze over the vegetables and toss to coat evenly.

Spread the vegetables in a single layer and roast in the oven for 30-35 minutes, or until they are tender and caramelized, stirring halfway through.
