Cooking Instructions

  1. 1

    Prepare the Beef Tenderloin

Preheat your oven to 200°C (400°F). Rub the beef tenderloin with olive oil, minced garlic, salt, pepper, and rosemary. Let it marinate for 30 minutes.

  2. 2

    Cook the Beef

Sear the beef tenderloin in a hot skillet for 2-3 minutes on each side until browned. Transfer to the oven and roast for 20-25 minutes for medium-rare.

  3. 3

    Prepare the Asparagus

While the beef is roasting, trim the asparagus and toss with olive oil, salt, and pepper. Roast in the oven for the last 10-15 minutes until tender.

  4. 4

    Create the Salad

In a large bowl, combine mixed greens, halved cherry tomatoes, shaved Parmesan cheese, and drizzle with balsamic vinegar. Toss gently to combine.

  5. 5

    Plate the Dish

Once the beef is cooked to your liking, let it rest for 10 minutes before slicing. Serve with roasted asparagus and the mixed greens salad. Drizzle basil pesto over the beef.
