Prepare the Potatoes
Peel the potatoes and cut them into evenly sized cubes, about 1 inch each.

Par Boil the Potatoes
Place the potato cubes in a large pot of salted water and bring to a boil. Cook for about 10 minutes, or until just tender but not fully cooked. Drain and let them sit for a few minutes to steam dry.

Preheat the Oven
Preheat your oven to 425°F (220°C).

Season and Oil the Potatoes
In a large bowl, toss the parboiled potatoes with olive oil, salt, black pepper, garlic powder, and chopped fresh rosemary until well coated.

Spread the seasoned potatoes in a single layer on a baking sheet. Roast in the preheated oven for 25-30 minutes, turning halfway through, until golden brown and crispy.
