    Prepare the Marinade

    In a blender, combine guajillo chiles (stemmed and seeded), pineapple juice, garlic cloves, cumin, oregano, salt, and pepper. Blend until smooth.

    Marinate the Pork

    Cut the pork shoulder into small chunks and place it in a bowl. Pour the marinade over the pork, ensuring all pieces are coated. Cover and refrigerate for at least 4 hours, preferably overnight.

    Cook the Pork

    Preheat a grill or skillet over medium-high heat. Remove the pork from the marinade and cook for about 10-15 minutes, turning occasionally, until the pork is cooked through and slightly charred.

    Prepare the Toppings

    While the pork is cooking, finely chop the onion and cilantro. Set aside.

    Assemble the Tacos

    Warm the corn tortillas on the grill for about 30 seconds on each side. Once warm, place some of the cooked pork on each tortilla, top with chopped onion and cilantro, and serve with lime wedges.
