Custard Preparation
Heat the Dairy
In a saucepan, combine the milk and heavy cream over medium heat until hot but not boiling.
Add Gelatin
Soak the gelatin sheets in cold water for 5 minutes, then add to the warm custard and stir until dissolved.
Chill
Pour the custard into a bowl, cover, and refrigerate until set, about 4 hours.
Chamomile Infusion
Brew Chamomile
Boil 1 cup of water and steep chamomile tea bags for 5 minutes. Remove the bags and let the infusion cool.
Apple Topping
Prepare the Apple
Core and dice the green apple, then toss with lemon juice and sugar. Let sit for 10 minutes to macerate.
Assembly
Serve
Scoop the set custard into serving dishes, top with the macerated green apple, and drizzle with chamomile infusion.
