BBQ Pork Ribs

Prepare the Ribs
Preheat your oven to 150°C (300°F). Rub the pork ribs with salt, black pepper, garlic powder, onion powder, and paprika. Let them marinate for at least 30 minutes.

Cook the Ribs
Place the ribs on a baking sheet lined with foil. Bake in the oven for 2.5 to 3 hours until tender. Baste with BBQ sauce halfway through cooking.

Make Crispy Corn Corunda
In a mixing bowl, combine cornmeal and water to form a batter. Heat oil in a skillet over medium heat. Pour in the batter to form small patties and cook until golden brown on both sides.

Prepare Poblano Verde Sauce
Roast the poblano peppers over an open flame until charred. Peel off the skin and blend with olive oil, lime juice, and cilantro until smooth.

Serve
Slice the ribs and serve them on a plate with crispy corn corunda and drizzle with poblano verde sauce.
