Prepare the Herb Filling

Cook the Herbs

In a skillet, heat olive oil over medium heat. Add minced garlic and sauté until fragrant. Add the fresh herbs and cook until wilted. Season with salt and pepper. Remove from heat and let cool.

Make the Aebleskiver Batter

Combine Dry Ingredients

In a large bowl, mix together the flour, baking powder, and salt.

Mix Wet Ingredients

In another bowl, whisk together the milk, eggs, and melted butter.

Combine Mixtures

Gradually add the wet ingredients to the dry ingredients, stirring until just combined. Do not overmix.

Cook the Aebleskiver

Heat the Aebleskiver Pan

Preheat an Aebleskiver pan over medium heat and grease each well with butter.

Fill and Cook

Pour a small amount of batter into each well, add a spoonful of the herb filling, and then top with more batter. Cook until golden brown, about 3-4 minutes on each side, turning with a skewer or chopstick.

Prepare the Herb Emulsion

Blend the Emulsion

In a blender, combine fresh herbs, lemon juice, olive oil, and salt. Blend until smooth.

Serve

Serve the Aebleskiver warm, drizzled with the herb emulsion.
