    Prepare the Vegetables

    In a skillet, heat olive oil over medium heat. Add sliced onions and mushrooms, and sauté until softened, about 5 minutes. Add spinach and cook until wilted. Season with salt and pepper.

    Assemble the Sandwich

    Cut the ciabatta buns in half. Layer the bottom half with pinto beans, mozzarella cheese, sautéed vegetables, sliced tomatoes, avocado, and roasted red peppers.

    Drizzle with Glaze

    Drizzle balsamic glaze over the top of the assembled veggies.

    Toast the Sandwich

    Close the sandwich with the top half of the ciabatta bun. Place the sandwich in a panini press or grill until the cheese is melted and the bun is golden brown, about 5-7 minutes.

    Serve

    Slice the sandwich in half and serve warm.
