Cheesecake Preparation
1. Prepare the crust
Preheat the oven to 180°C (350°F). In a mixing bowl, combine the graham cracker crumbs, melted butter, and a pinch of salt. Mix until the crumbs are evenly coated with butter. Press the mixture into the bottom of a 9-inch springform pan to form an even layer. Bake for 8-10 minutes until lightly golden, then remove from the oven and let cool.
2. Make the cheesecake filling
In a large mixing bowl, beat the cream cheese and granulated sugar together until smooth and creamy. Add the sour cream and vanilla extract, mixing until well combined. Add the eggs one at a time, mixing on low speed just until incorporated after each addition. Be careful not to overmix.
3. Bake the cheesecake
Pour the cheesecake filling over the cooled crust in the springform pan. Smooth the top with a spatula. Bake in the preheated oven for about 50-60 minutes, or until the edges are set and the center is slightly jiggly.
4. Cool and chill
Turn off the oven and crack the door open, allowing the cheesecake to cool in the oven for 1 hour. Remove from the oven and let it cool to room temperature. Once cooled, cover with plastic wrap and refrigerate for at least 4 hours, preferably overnight.
5. Serve
When ready to serve, dust the top with additional graham cracker crumbs if desired. Slice, serve, and enjoy your Grandma G’s Classic Cheesecake!
