These tubular rigatoni are hand stuffed with our fresh ricotta cheese, Oregano’s herbs and covered with a slightly creamy meat sauce. It’s finished with shredded Parmesan.

Prepare the Rigatoni
Cook the rigatoni pasta in a large pot of salted boiling water according to package instructions until al dente. Drain and set aside to cool slightly.
Make the Filling
In a bowl, combine the ricotta cheese, dried oregano, salt, and pepper. Mix well until combined.
Stuff the Rigatoni
Using a piping bag or a small spoon, carefully stuff each rigatoni piece with the ricotta mixture.
Prepare the Meat Sauce
In a large skillet, heat olive oil over medium heat. Add chopped onion and minced garlic, sauté until softened. Add ground beef or sausage, cook until browned. Drain excess fat.
Combine Sauce Ingredients
Stir in the tomato sauce and heavy cream into the meat mixture. Season with salt and pepper to taste. Simmer for 5-7 minutes.
Assemble the Dish
In a baking dish, spread a layer of the meat sauce on the bottom. Arrange the stuffed rigatoni on top and cover with the remaining sauce. Sprinkle shredded Parmesan cheese over the top.
Bake
Preheat the oven to 375°F (190°C). Bake the dish for about 20 minutes, until bubbly and golden.
Serve
Remove from the oven and let cool slightly before serving. Enjoy your Stuffed Riga Tony!
