    Prepare the Filling

    In a large mixing bowl, combine the ground pork, pork fat, finely chopped onion, minced garlic, dried thyme, nutmeg, black pepper, and salt. Mix well until all ingredients are evenly incorporated.

    Prepare the Pastry

    Roll out the shortcrust pastry on a floured surface to a thickness of about 5mm. Reserve some pastry for the lid.

    Assemble the Pie

    Line a pie dish with the rolled pastry, ensuring it covers the base and sides. Fill the pastry with the pork mixture and compact it gently. Roll out the reserved pastry to create a lid and place it on top of the filling.

    Seal and Glaze

    Seal the edges of the pastry by pressing them together. Make a small hole in the center of the pie to allow steam to escape. Brush the top with the beaten egg for a golden finish.

    Bake the Pie

    Preheat the oven to 180°C (350°F). Bake the pie for about 1 hour or until the pastry is golden brown and the filling is cooked through.

    Allow the pie to cool for a few minutes before slicing. Serve warm or at room temperature.
