Prepare the Broth

In a large pot, add pork bones and cover with water. Bring to a boil and then simmer for 12-18 hours, skimming off any scum that rises to the top. The longer you simmer, the richer the broth will be.

Make Chashu Pork

In a separate pot, combine chashu pork belly with soy sauce, mirin, and enough water to cover. Simmer on low heat for 2-3 hours until tender, then let cool in the liquid before slicing.

Prepare Soft Boiled Eggs

Bring a small pot of water to a boil. Carefully add eggs and boil for 6-7 minutes. Remove and place in an ice bath to stop the cooking process. Once cooled, peel and marinate in a mixture of soy sauce and mirin for 30 minutes.

Cook Noodles

In boiling water, cook fresh ramen noodles according to package instructions (usually around 3-4 minutes for fresh noodles). Drain and rinse under cold water.

Assemble Ramen Bowls

In a bowl, add a serving of noodles. Ladle hot pork bone broth over the noodles. Top with sliced chashu pork, soft boiled eggs, chopped green onions, and slices of Naruto fish cake. Season with salt to taste.
