Preparation Steps

Prepare the Broth
In a large pot, combine the pork bones and water. Bring to a boil, then reduce to a simmer. Skim off any impurities that rise to the surface.

Add Black Garlic
After simmering for 4 hours, add the black garlic, soy sauce, and mirin to the pot. Continue to simmer for an additional 2 hours.

Cook the Chashu Pork
In a separate pot, simmer the chashu pork belly in soy sauce, mirin, and water for about 2 hours, until tender. Let cool and then slice.

Prepare the Noodles
Make homemade ramen noodles or use store-bought noodles. Cook noodles according to package instructions, then drain and set aside.

Soft Boil Eggs
Boil the eggs for 6-7 minutes for a soft yolk. Remove and place in ice water, then peel.

Assemble the Ramen
In a bowl, place cooked noodles, pour over the hot broth, and top with chashu pork, sliced tamago, naruto fish cake, shredded green onions, and shredded chili pepper. Season with salt to taste.
