    Make the Ramen Noodles

    In a bowl, mix flour and salt. In another bowl, mix water and kansui. Gradually add the liquid to the flour while kneading until a dough forms. Knead for about 10 minutes until smooth. Cover and let rest for 30 minutes.

    Prepare the Chashu Pork

    Roll the pork belly tightly and tie with kitchen twine. In a pot, combine soy sauce, mirin, and dashi stock. Add the pork and simmer for 2-3 hours until tender. Let it cool in the broth.

    Cook the Tamago Eggs

    Bring water to a boil. Gently add the eggs and boil for 6-7 minutes. Transfer to ice water, then peel and marinate in soy sauce for at least 30 minutes.

    Roll Out the Noodles

    After resting, roll out the dough to your desired thickness. Cut into thin strips to form noodles.

    Cook the Noodles

    Boil water in a large pot. Add the noodles and cook for 2-3 minutes until al dente. Drain and rinse under cold water.

    Assemble the Ramen

    In a bowl, add the cooked noodles. Pour hot dashi broth over the noodles. Slice the chashu pork and place on top, along with sliced tamago, naruto slices, and chopped green onions.
