Method

Preparation Steps

  1. 1

    Prepare Chashu Pork

Roll the pork belly tightly and tie it with kitchen twine. Sear it in a pan until browned on all sides. In a pot, combine soy sauce, mirin, salt, and water. Add the pork and simmer for 2-3 hours until tender. Let it cool in the sauce before slicing.

  2. 2

    Make Dashi Stock

In a pot, combine bonito flakes and water. Bring to a boil, then reduce heat and simmer for 10 minutes. Strain to get a clear dashi stock.

  3. 3

    Soft Boil Eggs

In a pot, bring water to a boil. Gently add eggs and boil for 6-7 minutes. Remove and transfer to an ice bath. Once cool, peel and marinate in soy sauce for 30 minutes.

  4. 4

    Cook Ramen Noodles

Cook the ramen noodles according to package instructions. Drain and set aside.

  5. 5

    Assemble Ramen Bowls

In a bowl, combine dashi stock and additional salt to taste. Add cooked noodles, slices of chashu pork, halved soft-boiled eggs, naruto slices, and garnish with shredded green onions.
