Prepare the Gelatin
In a small bowl, combine the gelatin powder with 0.25 cups of cold water and let it sit for about 10 minutes until it blooms.

Cook the Sugar Mixture
In a saucepan, combine the granulated sugar, corn syrup, and remaining 0.25 cups of water. Cook over medium heat, stirring until the sugar dissolves, then increase the heat and bring to a boil. Use a candy thermometer to monitor the temperature, and cook until it reaches 240°F (soft-ball stage).

Mix Gelatin and Sugar Syrup
Once the sugar mixture reaches the correct temperature, remove it from the heat. Add the bloomed gelatin, vanilla extract, and salt, stirring until the gelatin is completely dissolved.

Whip the Mixture
Transfer the mixture to a stand mixer and beat on high speed for about 10-15 minutes until it becomes thick, fluffy, and increases in volume.

Fold in Berries
Carefully fold in the AK berries until evenly distributed throughout the marshmallow mixture.

Prepare the Pan
Lightly grease an 8x8 inch pan and dust it with a mixture of powdered sugar and cornstarch to prevent sticking.

Spread the Mixture
Pour the marshmallow mixture into the prepared pan and spread it evenly. Dust the top with more powdered sugar and cornstarch mixture.

Let Set
Allow the marshmallows to set at room temperature for at least 4 hours or until firm.

Cut and Coat
Once set, dust a clean surface with powdered sugar and cornstarch, turn out the marshmallow slab, and cut it into squares. Toss each square in the powdered sugar and cornstarch mixture to coat.
