Method
Mochi Preparation
Cool Dough
Allow the mochi dough to cool slightly before handling. Dust your work surface with cornstarch to prevent sticking.
Filling Preparation
Tropical Filling
In a bowl, combine mashed guava, diced mango, chopped macadamia nuts, and diced pineapple. Mix well to combine.
Traditional Filling
If making traditional daifuku, ensure the sweet red bean paste is ready for use.
Assembly
Shape the Mochi
Dust your hands with cornstarch, take a small piece of mochi dough (about the size of a golf ball), and flatten it into a disk.
Add Filling
Place about 1-2 tablespoons of your chosen filling in the center of the disk. Carefully fold the edges of the mochi over the filling to seal it.
Finish the Daifuku
Roll the filled mochi ball gently in your hands to smooth it out. Dust with shredded coconut or extra cornstarch, if desired.
