Prepare the batter

In a large mixing bowl, combine the sweet rice flour, baking powder, and salt. In another bowl, whisk together the coconut milk, maple syrup, melted coconut oil, and vanilla extract until smooth.

Combine wet and dry ingredients

Gradually add the wet mixture to the dry mixture, stirring until well combined and smooth. The batter will be thick.

Add mix-ins

Gently fold in the blueberries, chocolate chips (if using), and shredded coconut until evenly distributed.

Prepare baking dish

Preheat your oven to 350°F (175°C). Grease an 8x8-inch baking dish with coconut oil or line it with parchment paper.

Bake the mochi

Pour the batter into the prepared baking dish and spread it evenly. Bake in the preheated oven for 30-35 minutes, or until the top is lightly golden and a toothpick inserted in the center comes out clean.

Cool and cut

Allow the mochi to cool in the baking dish for about 15 minutes before transferring to a wire rack to cool completely. Once cooled, cut into squares or rectangles.
