Prepare for Frying
After marinating, remove the chicken from the marinade and allow excess liquid to drip off. Dredge each piece in cornstarch until well coated.

Heat the Oil
In a deep pan or fryer, heat vegetable oil to 170°C (340°F). Make sure there is enough oil to fully submerge the chicken pieces.

Fry the Chicken
Carefully add the chicken pieces to the hot oil in batches, ensuring not to overcrowd the pan. Fry until golden brown and cooked through, about 5-7 minutes. Remove and drain on paper towels.

Assemble the Don
In bowls, place a serving of cooked rice. Top with fried chicken, drizzle with additional soy sauce if desired, and garnish with shredded seaweed, sliced green onions, and beni shoga.
